    When Robby comes to Seattle, I am going to make him something like this! That almost means I need to try it out myself first. ;)

    It is super good.  The easiest thing to do is buy a round of fresh mozzarella (or make your own, it’s easy but kinda for the science inclined and you need a cheese cloth AND be able to have your hands withstand a good amount of heat to pull the cheese), buy good tomatoes (I prefer heirloom because they are sweeter), and just make thick slices of both and layer them.  Then top with balsamic vinaigrette and fresh basil.  Super good and super easy.

    You can also make more of a ‘salad’ by having balls of mozzarella and tiny cheery tomatoes tossed with basil and vinaigrette.  

    Either way is delicious!  And, any white cheese tastes good (including ricotta), but the traditional is mozzarella.
